Mix Vegetable Curry

Ingredients
- 3 tbsp Oil
- 1 tsp Fennel seeds
- 1 tsp Coriander Powder
- 1 tsp Chili Powder
- 2 tsp root ginger
- 2 cloves Garlic
- 2 nos. Onion Chopped
- 1 nos. Brinjal
- 1 nos. Potato Sliced
- 1 nos. Carrot Sliced
- 400 Gm Tomato Chopped
- 2 nos. Green Chili Chopped
- 50 gm Frozen Matter(peas)
- Some water
- Some coriander leaves
- Salt as required
Instructions
- Heat the oil in pan,
- stir in the fennel seeds and cook for 1 min, stirring constantly.
- Add onions and cook for 5 min until brown. Lower the heat,
- Add the ginger, garlic and all the spices and cook, stirring for 1 min.
- Add the carrot, potato, brinjal, tomato and salt to taste.
- Add some water and mix well and cook for 15 min.
- Bring slowly to the boil.
- Now add peas and stir and cook for 3 minutes
- Add some coriander leaves and now it ready to serve.
