Besan Barfi
Besan barfi, a traditional dessert, is made by cooking Gram flour with ghee, sugar, and cardamom until it forms a thick, fudgy consistency before being cut into squares and garnished with nuts.
Ingredients
- 350 gm Butter or Ghee
- 275 gm Besan flour
- 300 ml Water
- 350 gm Sugar
- 1 tbsp cardamoms power
- 6-8 nos. Nuts sliced Almonds, Pistachio and Cashew
- pinch Saffron or Food colour optional
Instructions
- Using a heavy based heat pan, melt the butter or ghee and put the besan in it.
- Roast the besan flour for 5-6 minutes until the besan turns lightly browned.
- Remove from the heat.
- Prepare a thick sugar syrup by placing the water in a pan with the sugar.
- Heat until the sugar dissolves, add cardamoms powder then bring to the boil for 5 minutes until the syrup has thickened.
- Add the roasted besan to the syrup and cook on a low heat for 10-15 minutes.
- Remove from the heat, add nuts.
- Transfer the barfi mixture in to a greased dish, let cool down or rest for 1 hour.
- Then cut into cubes or diamond shapes.
- Enjoy the Besan Barfi.
